  • 1oz Prosecco DOC
  • 1oz bitter
  • 1oz Sweet Vermouth
  • orange peel to garnish
  1. Add the bitter and sweet vermouth to a mixing glass filled with ice and stir until well-chilled.
  2. Strain into a rocks glass over fresh ice
  3. Top with Prosecco DOC.
  4. Garnish with an orange peel.

Hey—while we’re at it, why not have a fresh turn on the Bellini Cocktail!

Made with Prosecco DOC, instead of Champagne, it should be regarded as one of the best sparkling wine cocktails in the world!

When making a Bellini, everything (the glasses, Prosecco DOC and the white peach purée) should be as cold as possible. The general rule is to use one part white peach purée to three parts Prosecco DOC.

Use fresh or fresh-frozen white peach purée when you can. Add a bit of sugar or some simple syrup if the purée is too tart or a tad sour. Shun the yellow peaches, please. If you wish, add a touch of raspberry or cherry juice, which gives the drink that unique translucent pink hue.

And if I may add my two cents: A lot of the world’s sparkling wines are Champagne wannabes. But that’s not the case when it comes to Prosecco DOC.

Always consider Prosecco DOC as an ideal apperitivo or ombrette (pick-me-up). It’s what you want when you’re in the mood for something completely different, fizz-wise.

Straw-colored Prosecco DOC with its overtones of citrus, melon, lemon, almonds, and honey, is a perfect all year around wine: crisp and clean with small bubbles which pairs nicely with salads, pizza, white meat, seafood,—and of course pasta!
