This Mother’s Day, let mom relax and enjoy the talents of Fantasy Springs’ world class chefs. There are special offerings to be had in three of our restaurants.

If a casual relaxed dining experience is what mom loves, then POM is the perfect pick. For $36 she can enjoy shrimp and veal Parmigiana. The sautéed jumbo shrimp and pan fried veal loin cutlet is served with marinara sauce, glazed with mozzarella and Parmesan cheese, sautéed broccolini,  penne alla vodka and grilled asiago ciabatta.  POM’s lunch and dinner menus are also available.

For a fine dining experience make a date with mom at the Bistro where Executive Chef Freddy Rieger will prepare the gourmet Surf and Turf Special. The dish includes pepper seared beef tournedos and butter poached lobster tail.  This is paired with white truffle whipped potatoes, sautéed asparagus and porcini mushroom demi glaze for $50.

The Fresh Grill Buffet serves up favorites for the whole family for brunch and dinner.  During brunch, mom can savor omelets cooked to order, eggs Benedict, smoked bacon, country sausage, egg and cheese stuffed mini croissants, broccoli-cheddar quiche, warm biscuits with country gravy, Belgian waffles, apple pancakes, blueberry-cheese blintzes, almond French toast, New York bagels with cream cheese and lox and more morning favorites just the way she likes them.

The buffet features fresh spring salads and soups including grilled chicken and shrimp Caesar salad, baby kale and spinach with goat cheese, grilled pineapple, dates and roasted beets.  Mesilla Valley mixed greens with roasted corn, tomatoes and shredded cheddar cheese,  Veracruz-style seafood ceviche, carrot, radish and jalapeno escabeche, asparagus mimosa with parmesan, chopped egg, and lemon Mexican cucumber and tomato salad, antipasto salad with imported Italian meats and cheeses, puebla-style menudo and chicken tortilla soup.

Save plenty of room for delectable carvery meats such as roast prime rib of beef, maple roasted breast of turkey and honey glazed Virginia ham.  Entrée specialties for brunch and dinner include grilled to order New York strip steaks, roast leg of spring lamb with rosemary-mint demi-glace, north coast seafood cioppino, baked fillet of salmon with gazpacho relish, Achiote spice grilled shrimp fajitas, barbecued St. Louis pork ribs, Yukon gold mashed potatoes with natural pan gravy and a grilled seasonal vegetable medley.  There’s also an impressive array of Italian, Asian and Latin Specialties. Patrons can get their fill of Gulf shrimp cocktail, Atlantic smoked salmon, New Zealand Mussels and Alaskan snow crab legs. Then mom can tempt her taste buds at the dessert station featuring the famous Fantasy Springs chocolate fountain surrounded by a huge selection of cakes, pastries, bananas Foster, churros, caramel flan, arroz con leche, warm bread pudding, sugar free selections and much more!
