Wildest Restaurant is turning the energy up this holiday season with a wine dinner that is anything but ordinary. On Monday, December 15, 2025 at 5:30 PM, Wildest welcomes the unforgettable Ted Plemons of Cass Winery — a man known in Paso Robles as the life of the party, a storyteller, a builder, a dreamer, and the driving force behind one of the most vibrant wineries in California.
This public dinner will feature a four‑course feast, estate-grown Cass wines, and Wildest’s signature hospitality — all for $125 per guest (tax + gratuity included).
A Paso Robles Night with Ted Plemons
If you know Ted, you already know: he doesn’t just pour wine — he brings an entire experience with him.
Born and raised in Paso wine country, Ted built luxury homes and boutique wineries long before he ever made a bottle of wine. In 2000, he was hired to build Cass Winery’s first production facility. One legendary wine‑and‑golf trip to South Africa later, he convinced Steve Cass to stop selling grapes and start making wine — and Cass Winery was born.
Ted has been unstoppable ever since. Fun, generous, outrageous in the best way, and always ready with a story, he brings his full personality to every glass. This event is designed to match that energy.
This dinner will not be a quiet night. It will be lively, delicious, and completely Ted.

Note from Wildest: This venison is one of Chef Trilby’s proudest dishes — tender, deeply flavorful, and perfectly matched to Cabernet. It’s a showpiece course, and always a guest favorite.
