For the first time since 2021, Waters Café at Agua Caliente Rancho Mirage has launched brand new menus for Breakfast and All Day dining. The restaurant’s Executive Chef has developed an exquisite menu of American comfort food classics with a light California twist. Guests are able to enjoy signature classic dishes, along with inspired new creations for breakfast, lunch and dinner.

The new menu, led by Executive Chef Juan Morales, features several new items including new signature, vegetarian and gluten-free dishes. A native of Los Angeles, Executive Chef Juan Morales’ fondest childhood memories are of family dinners and cooking with his mother, watching the passion and attention she gave to each item she prepared. She instilled that passion and drive into Chef Juan, which drove him to work with some talented chefs throughout his 20-year career. He was fortunate to begin his culinary journey as a chef with the Patina Group, where he learned from well-known chefs Joachim Splichal and Octavio Becerra.

Following Patina, he ventured to Las Vegas and Green Valley Ranch where he utilized his knowledge of the culinary industry to work with amazing teams. He brought new and exciting flavors and food concepts such as Kobe beef and Japanese A5 to various restaurants, one of which was rated a top 10 steakhouse in Las Vegas. As he learned that a good chef seeks out the guest’s initial response to a dish, he quickly became accustomed to adjusting and improving flavor profiles based on these reactions. Chef Juan enjoys introducing new flavors and textures to entrees using only the freshest produce and proteins, and there’s no better place to do that than right here in California.

The new menu will also be featured in the Agua Caliente Rancho Mirage’s hotel for in-room dining orders with a selection of the menu items also available at the Sunstone Spa. New menu items include Power Bowls & Light Bites, such as the Ground Turkey & Sweet Potato Power Bowl; Smoked Salmon Lox; and California Avocado & Hummus Toast

New Waters Breakfast Specialties are Huevos Rancheros and Jidori Chicken & Buttermilk Waffle, along with Coachella Valley Date & Lavender Crepes, the Short Rib Benedict, and the Chef-Crafted Steakhouse and Fresh Start Omelet.

New All Day Menu items (Served Sunday–Thursday from 6 AM –to 10 PM and Friday–Saturday from 6 AM to 11 PM) includes Carnivore, Desert Heat, Five Cheese Flatbreads; Quinoa & Brown Rice Harvest Grain Bowl, and Local Farmers Market Salads; Café Specialties like Braised Beef Short Ribs, Citrus-Marinated “Brick” Jidori Chicken, and Jambalaya;  and Sandwiches & Handhelds like Grilled Shrimp Tacos, Chimichurri Ribeye Sandwich, Cowboy Cheesesteak Sandwich, Toasted Short Rib Sandwich, and The Rutherford Chicken Sandwich.
