Nestled in the heart of this city’s revival, the Indio Taphouse is not just a bar – but a destination where craft beer connoisseurs and food enthusiasts unite for an unforgettable experience.
“I think that it is exciting to be opening a restaurant in the City of Indio since I have so much history with the city already. The Taphouse is going to be the focal point of the downtown Indio revitalization. There have already been some eateries that have opened and there will be several more in the coming months,” shared Indio Taphouse co-owner Skip Paige.
Skip was previously the COO of Goldenvoice, having retired in 2017, but remaining in close contact with the people involved. The creation of Indio Taphouse came about as Skip recognized that his neighbor, Roman Whittaker, although an attorney by trade, was a foodie and very accomplished in the kitchen. One day, Roman came to Skip with an idea of not only remodeling an old building in downtown Indio, but starting a restaurant as well as co-owners.
“He knew I had the skills to put together a team to operate and after two years of hard work, the Indio Taphouse is alive. It is important to note that the building we are in is quite large and will eventually house two additional restaurants and/or bars. The future in the area is very exciting,” revealed Skip.
With over 120 brews from local favorites to international gems, each pour tells a story of craftsmanship and passion. There is also a variety of craft cocktails to choose from, including Caramel Apple Martini, made with Tito’s vodka, Stoli salted caramel vodka, apple pucker, lemon juice & agave topped with a caramel candy. Another staple is the Desert Mule, with Tito’s vodka, pineapple, top hat ginger beer, hibiscus float, lime & ginger candy.
The Indio Taphouse offers more than just brews, but delicious dishes where unexpected and inventive flavors take center stage. From tasty cheeseburgers and tostadas to mouthwatering twists on pub classics, the menu is a journey of culinary discovery. Skip’s personal favorite menu item is the Agua Chili Tostada made with shrimp, compressed cucumber, avocado mousse, pickled serrano, red pearl onion & micro cilantro, while Roman’s is the Meatballs—consisting of three beef and pork meatballs, ricotta cheese, house-made arrabbiata sauce, pecorino romano, parsley & basil.
